You asked for it guys so here it is. The super popular post practice treat. This took a few weeks of experimentation by Lenka at HappyFood HQ like many of her gorgeous recipes. These muffins have created many the raving fan for HappyFood so maybe you could get in on some of that action with this simple recipe. Let us know how you get on with it!

 

Ingredients: 

Makes 6 Muffins

2-3 bananas
2 carrots
2 apples (make your own apple sauce) or 2 Tsp of bought apple sauce
handful of raisins
1 tea spoon of cinnamon
1/2 cup of sunflower oil
1/3 cup sugar
1/2 cup of Gluten Free Flour
Now how do you put it all together:
1. Heat oven to 200C/180C fan/gas 6.
2. Line muffin tray  with paper muffin cases.
3. In a large bowl mush bananas, add oil, sugar, flour and the rest of ingredients.
4.Fill muffin cases two-thirds full and bake for 20-25 mins, until risen, firm to the touch and a skewer inserted in the middle comes out clean.
5.Leave the muffins in the tin to cool for a few minutes and transfer to a wire rack to cool completely.
6.Get the kettle on, invite some friends over and create some raving fans of your own 😉

    These look great and will defo try them out 🙂 just a question about the carrots. Are they cooked / raw. Do you grate them in? For the apple sauce how much water ? and do you just simmer the apples until soft?! Also would be lovely if the measurements were in grams rather than cups…..?!?! 🙂 Cheers!

      Use raw grated carrot. Then just dice the apple and add a tbs or two of water and simmer down until soft to make apple sauce. We just use a mug in the kitchen as or measuring cup,it’s not american measurements just use the same mug/cup you have handy to measure all the ingredients and then it’s all relative 🙂
