When life gets hectic, food can either be the first or last thing on your mind. For me I want something tasty, but with minimal effort.
Pizza is a crowd pleaser, I have yet to meet someone who tells me they don’t enjoy a pizza. Pizza is also one of the things that people are concerned about when they hear you are a vegan or consider a vegan diet themselves, but fear not. There’s plenty of vegan pizza to go around! And what’s more this recipe is so healthy you can enjoy a pizza to yourself š
This recipe is for a simple, gluten free, vegan pizza that’s packed with delicious veggies, and you can make it in 40 Ā minutes! The great thing about pizza is that the toppings can be modified to suit everyones taste, simple!
Ingredients
For the base;
150g gluten free self raising flour (or any flour of choice really)
100ml warm water
1 tsp Oregano
1 tsp Garlic powder
1tsp mixed herbs
Salt and pepper
For the cheats sauce;
3 tbs tomato puree
1 tbs olive oil
1 tsp oregano
fresh/dried basil to taste
salt and pepper
For the toppings;
I used
mushrooms
baby leaf spinach
red onion
red and yellow pepper
fresh tomato
sun dried tomato
(but of course use whatever you like)
Method
Preheat your oven to Gas 6/200*C
Mix the ingredients for the base in a bowl, until they form a ball of dough, add more flour if needed
Knead the dough lightly on a floured surface for 1 minute, then place onto a lined baking tray
FlattenĀ the dough with your hands to form a flat shape (circle/oval/square) then roll out until even all over about 1cm thick (I used a glass forĀ rolling)

Sprinkle with salt and pepper and bake at Gas 6/200*C for 15 minutes, until crispy
Meanwhile, mix the ingredients for the sauce in a bowl and set aside
Prep the toppings, slicing thinly
After 15 minutes take the base from the oven, cover with sauce and vegetables and bake for a further 20 minutes until all the vegetables are lightly charred and cooked through.

Cut into slices, and enjoy hot (but this is also tasty re heated the next day)
